So, I've managed to get myself super sick. Now, I"m stressed about being, uh, sick. Great. Anyway, my friend LC (not of HILLS fame, she's too good for reality TV) told me to slow down, so, I'm really trying. I did get all the in-law presents shipped out yesterday and finally bought a little something for the hubby. And worked an hour or so...or three. Okay, I will stop trying to justify my blog absence. (My top ten list of 2010 jerks will posted shortly, men and women included) This post is about food. My girlfriend is currently writing a cookbook and I've volunteered to test 5 recipes. Exciting. So, what are your favorite recipes? What is your holiday staple? Not in my recipe testing portfolio but my go-to is a mushroom risotto. It's easy and SO TASTY. People are scared of risotto, but, it's delish and good things come to those who wait. Here is how you make it:
**Note: most risottos have cream, butter, and cheese...but mine has NONE OF THAT. You don't need it. The flavor is just as good without the extra calories.
Dry White Wine (optional)
2 Cartons LOW SODIUM Chicken Broth
Sea Salt & Pepper
Before you start, empty carton of chicken broth in saucepan and bring to a simmer.
Splash oil in a pan, chop up a shallot, add carton of mushrooms ( or however many mushrooms you'd like.) Bring to a simmer, saute thoroughly. Put in separate bowl.
More oil in pan. 2 cups of Arborio Rice, stir in oil...coat til golden. Add 1/2 cup of wine. Let cook off...
Then, slowly add chicken broth by ladle. Stir continuously. This will take at least 35 minutes. When you have about two ladles left of broth, add back in your mushrooms and shallots. Salt and pepper to taste. Make sure the rice is tender. Add the rest of the broth, cook through, salt or pepper again as needed. Chopped CHIVES looks nice on top as a garnish.
Enjoy. It's SO GOOD.

Dexter and Debra Morgan are getting divorced. Well, those names are the characters they play in one of my favorite shows, Dexter. I haven't seen season 5, so, Shhh. Anyway, Michael C Hall and Jennifer Carpenter were only married 2 years after eloping on New Years Eve 2008. Please don't kill your sister Dex. It'll ruin my life a la Season 4 Finale. I ugly cried for days after that episode.

Total girl crush. She's smart and gorgeous. Here is a quote from her Vogue article on newstands this month:
"I gained my freshman fifteen or 20 and had superdepressed moments. That Cambridge winter is tough. It was important to know how to go through that and how to get myself out of it. You start learning how to ask your friends or professionals for help, or go to mentors."
Seasonal despression is a huge issue when you live in an area that doesn't have the best weather year-round. However, I also gained the Junior 15 and I'm pretty sure it was from pizza, not the weather.

Carey Mulligan is an interesting, gorgeous actress. I lover her hair, but, apparently, she doesn't: "I hate my hair. After An Education, I had a small part in Michael Mann’s film Public Enemies, and he wanted me to dye it white blonde and it wrecked my hair. Literally, ruined it. It was falling apart, fried. So I had to cut it off. I cried."

So, Chelsea Handler went off about Angelina Jolie during her standup set in New Jersey this past weekend. Big deal? Well, she was calling her all sorts of names, such as a homewrecking ($*%&(@. Uh, whatever. I don't care what comedians say in their set, but, the timing may be a little off. Chelsea went to Cabo with Jennifer Aniston and people are going to speculate that Angelina was a topic of conversation. Do I think that they stayed up all night whispering about Brangelina? Uh, no. Would I defend and protect my friend? Yes, but only if she needed it. I think in this case the extra attention was not needed nor wanted by Jen and Chelsea should've kept her mouth shut. In her defense, she says she's been making fun of Angie for years.
